Ultimate Kale & Avocado Salad

We love a good salad. But, we're the first to admit that sometimes your go-to salad can get oh-so-boring. The key to making a good salad (and staying happy with your salad), is switching-it-up every so often and trying something new. Take our ultimate kale and avocado salad. We've switched-out our usual romaine for kale (which is loaded with antioxidants and other good-for-you nutrients) and we've added radicchio for a burst of colour and some awesome crunch. Then we recommend tossing in any other veggies you've got on hand — here we used julienned carrots, cherry tomatoes and avocado. Add some more crunch and pack in some omega 3's with coarsely chopped walnuts or almonds and drizzle with a super-simple lemony vinaigrette. Looking to make this salad more of a main course? Try adding some cooked quinoa, lentils or even some fiber-rich chickpeas. 

Ultimate Kale & Avocado Salad

What you'll need

1 bunch kale, destemmed, cleaned and roughly chopped, or 4 large handfuls baby kale leaves

½ radicchio, thinly sliced

2 large carrots, peeled and grated or julienned

1 large ripe avocado, peeled, pitted and diced

1 cup coarsely chopped walnuts or almonds

1 cup cherry heirloom tomatoes, halved

Lemony Vinaigrette

Juice of 2 lemons

1/3 cup olive oil

1 tsp flaked sea salt

Pinch freshly ground black pepper

How-to

1. In a large bowl, combine the kale, radicchio, carrots, avocado, walnuts and cherry tomatoes. Use your hands to gently toss to combine ingredients.

2. In a small bowl, whisk together lemon juice, olive oil, sea salt and pepper, until emulsified. Drizzle half of vinaigrette over salad and toss to evenly coat. Taste and add more vinaigrette of you like!

3. Serve immediately and enjoy!
